Vegan Blueberry Galette with Spelt Crust

So it's been almost a week since lockdown has been lifted, but I have to admit it has taken me a bit of time to adjust. Being around people all of a sudden after a couple weeks was maybe a bit overwhelming, but I'm not complaining. Besides, gyms are opening tomorrow, which I'm excited about!

Come to think of it, I'm actually pretty grateful for this recent lockdown. It really gave me an opportunity to take a step back and sort out my priorities etc. I've got a pretty good routine going now so I'm glad I walked out of it better than before, in a way.

I got into filming reels for Instagram during lockdown, and while it's more work, I've been enjoying the process quite a bit. I've been updating Instagram almost everyday, and sometimes it takes me a bit to add them on the blog too. That said, I'll be posting everything both here and there eventually, it just takes me a while to catch up when I'm busy.

This Blueberry Galette recipe is what I make when I have a craving for something sweet, but not too sweet, and I want something quicker than a pie. It's really easy to put together, it's sugar-free and simply delicious! Click here for a step by step video.

Vegan Blueberry Galette with Spelt Crust

Crust
 2 cups Spelt Flour
 ½ cup Vegan Buttercan refrigerated use coconut oil
 ½ cup Cold Waterstart with 1/4 cup and add more as needed
 1 tsp Vanilla Extract
Blueberry Filling
 2 cups Blueberriesfresh or frozen
 1 tbsp Spelt Flouror cornstarch
 1 tsp Vanilla Extract

Preheat oven to 180C (350F) degrees and line a baking sheet with baking paper.

For the crust, cut the vegan butter into the flour and mix until it resembles coarse sand.

Add in the vanilla and just enough water so that it forms a dough.

Knead the dough into a flat sheet and cut out circles using a bowl.

For the filling, mix together the blueberries, vanilla and spelt.

Add in about 3 tbsp of filling onto the centre of each circle and wrap around the sides.

Brush with some water and bake for about 15 minutes or until golden brown. Enjoy!
