Here’s a Sugar-Free and Vegan Blueberry Galette recipe. It may look and taste like dessert, but it has no added sugar in it, so that makes it okay to have it for breakfast, right?
Preheat oven to 180C (350F) degrees and line a baking sheet with baking paper.
For the crust, cut the vegan butter into the flour and mix until it resembles coarse sand.
Add in the vanilla and just enough water so that it forms a dough.
Knead the dough into a flat sheet and cut out circles using a bowl.
For the filling, mix together the blueberries, vanilla and spelt.
Add in about 3 tbsp of filling onto the centre of each circle and wrap around the sides.
Brush with some water and bake for about 15 minutes or until golden brown. Enjoy!
