Cashew Cream (vegan, sugar-free)

I have sensitivity to quite a few food items: coffee, dairy, gluten, etc. One thing I'm glad I can eat without any issues is cashews. They're so versatile and can be used to replace a lot of dairy items such as cheese and cream.

This vegan Cashew Cream recipe is one of those examples. So rich in taste, yet no oil or refined sugar added to it, and easy to make as well. Just a matter of chucking everything in the blender.

This sugar-free Cashew Cream is so smooth and decadent and goes well with everything. This is a sweet version that you could use to top fruit, oatmeal, desserts etc. In fact, I made this to use as a topping for a sugar-free Apple Pie recipe I made for the blog which I'm excited to share tomorrow. But you could also omit the dates and vanilla, replace some of the water with lemon juice and enjoy it as a savoury cream.
