I'm on a bit of a lentil kick lately. I know I said lentil soup is one of my favourite dishes but i think it might be a tie with this one. I love these so much I downed all of it in one sitting (in my deference I needed to replenish after making these, taking photos, editing etc 😝) I could eat these lentil the and of time (yep, I did it again.)
Traditionally these are made with bulgur but being gluten-free, I had to come up with an alternative. Quinoa works just as well, if not better, and adds some extra health benefits and protein. It's also much more accessible in most countries.
Other than that, it's pretty much just chopping and mixing things together and shaping them. I'm sure you could do a better job of forming these into patties, I'm hopeless! It probably didn't help that I often got distracted and ate some straight out of the container (or the ones that were too obstinate to be formed into a nice shape...)
A common way to serve these is on a bed of lettuce, and grab a piece, wrap it around a patty, and enjoy.

Pour the hot water into a medium sized pot and add the lentils. Bring to a boil, and when boiling, add the quinoa. Close the lid, turn the heat down to low, and let it simmer until everything is thoroughly cooked. Let cool for a few minutes.
In another pan, sautee the chopped onion. Add tomato paste and stir.
Add the sautéed onions to the cooked lentil and quinoa mixture. Add in the spices, scallions, parsley and mix. Feel free to taste the mixture and adjus the spices and salt to your liking.
Form into patties, either like in the photos or into circles. Traditionally these are served on a bed of lettuce and are best enjoyed cold.
