A delicious chocolate chip cookie dough that you can eat raw without any of the guilt.

Vegan Chocolate Chip Cookie Dough

Cookie Dough
 1 ½ cups Raw Cashewssoaked for 4 hours
 1 cup Datessoaked 15 mins to 1 hour
 ½ cup Light Coconut Milkfull-fat will also work
 1 tbsp Vanilla Extract
 ¼ tsp Baking Sodafor flavour
 Pinch of Salt
 ½ cup Chocolatechopped (I used carob chocolate)

Blend all the cookie dough ingredients except chocolate in a high-speed blender or food processor.

Mix in the chopped chocolate (or chocolate chips).

Serve immediately or chill in the fridge for 1 hour for a firmer cookie dough. This will keep in the fridge for up to a week, or up to 2 months in the freezer. Enjoy!
