Vegan Galaxy Smoothie Bowl

In true Sunday fashion, I decided to start my day with a smoothie bowl. I've been meaning to make galaxy themed desserts for a while now cause I think they look gorgeous, and decided to have a crack at it. It was actually super fun. It looked like I was painting, except all the "paint" was edible and delicious.

Now I know there's some amazing ones out there if you search galaxy smoothie bowls, but I think this one turned pretty alright. And the beauty of this is it's so simple to make! And despite the colourful, dessert-y look, it's actually super healthy. The smoothie bowl base is just bananas, cashews, vanilla and water. And the colours come from Blue Spriulina powder, Dragonfruit powder, Blueberry Powder and Charcoal powder. I know they aren't exactly pantry staples, but a little bit goes a long way so if you decided to invest in some, they'll last for ages.

Vegan Galaxy Smoothie Bowl

 2 Ripe Bananas
  cup Cashews
 ½ cup Water
 1 tsp Vanilla Extract
 1 tsp Charcoal Powder
 ½ tsp Blue Spirulina Powder
 ½ tsp Dragonfruit Powder
 ½ tsp Blueberry Powder

Blend all the ingredients except the powders in a high-speed blender. Reserve 6 tbsp of the mixture, and divide into 3 small bowls or glasses.

Mix the larger portion with Charcoal Powder until fully blended.

Mix each 2 tbsp mixture with a different colour powder. (2tbsp smoothie mixture with 1/2tsp Blue Spriulina Powder and so on)

Pour the charcoal mixture into a bowl. Top with little dollops of each different colour. Run over them with a knife to create a swirl effect.

Top with your favourite toppings. I used frozen raspberries, frozen blueberries and a bit of homemade white chocolate. Enjoy!
