Another easy recipe made in the blender, this vegan blueberry mousse is decadent and much healthier than most recipes loaded with sugar!

Creamy Vegan Sugar-free Blueberry Mousse

 2 cups Natural Cashews
 1 cup Blueberriesfresh or frozen
 1 cup Water
 ¼ cup Cocoa Butteroptional, can sub coconut oil
 1 tsp Vanilla Extract

Place everything in a high-speed blender and blend until smooth. If you don't have a high-speed blender, you can soak the cashews in boiling water for an hour to soften them.
