We're in our fourth lockdown here in Melbourne, so I've been using the extra time I have to work on more recipes for the blog. Lockdowns are never ideal (although necessary in most cases) but I try to make the best of it every time by doing something that I'm normally too busy to do and get back on track with things that I might have neglected.
And I guess today I was particularly inspired, because I just love what I came up with. (Not to tooth my own horn, but it's that good!) Some days it just works, and it probably helped that I had a big craving for something chocolate-y.
This is one of the richest, creamiest and tastiest hot chocolate you'll ever try! And you won't believe that it's sugar free and vegan. I don't know about you, but I was never a huge fan of regular hot chocolate.. i just think it tastes like nothing. Maybe it's the watery texture I can't get over, I don't know. This Italian Hot Chocolate on the other hand is so decadent and I love it.
Now, I'm not gonna say this is the healthiest dessert but I dare say this is probably better than sugar and dairy laden hot chocolates out there. One thing is for sure, it's not light on the calories. So if you calorie count, you may want to have it sparingly. But there's nothing wrong with occasionally treating yourself, right? And I can think of no better way, especially if you're also stuck in another lockdown. You deserve it!
This recipe is completely adaptable to your personal taste. You could add more or less cashews depending on how thick you want it (though I really don't recommend adding more), you could add different flavours like cinnamon or nutmeg, you could use different types of non-dairy milk (although coconut by far produces the richest version) and you could top it with anything you like: chopped nuts, berries, chocolate shavings, coconut cream or just enjoy it plain.

A delicious and creamy Italian hot chocolate that’s sugar free and vegan.
Soak the cashews for up to an hour beforehand and blend all the ingredients together in a blender. You can skip the soaking step if you’re using a high-speed blender.
Pour the mixture into a pot and heat it up over medium heat, stirring the whole time. Once heated enough, pour into a glass.
Top it with coconut cream, chocolate shavings, chopped nuts, fruits or just enjoy plain.
