Here's another variation on my Chocolate Vanilla Mousse recipe. This one is even easier to make, ready in 5 minutes. Just chuck everything in the blender and done!
This blueberry mousse makes for a rich breakfast or a healthy dessert. Sweetened with fruit as usual and made with minimal amounts of optional oil in the form of cocoa butter which helps to thicken it, it's creamy and decadent.
You can eat this plain or layer it up with some blueberries, peanut butter and coconut cream. I tend to just prefer it as it is just because it's easier and it's already pretty rich, but layering it up definitely makes for better photos 😂 You could also sub blueberries with other fruit such as raspberries, strawberries etc. The possibilities are endless and the recipe is pretty forgiving so feel free to experiment!Â
Can you tell I LOVE blueberries? I wonder if it's because back when I lived in Turkey, they were so difficult to find. Now that I have easy access to them, I just put them in everything. 😂 They're tasty and packed with antioxidants, so why not? If you're a blueberry fan like I am, you should also try this Blueberry Pie recipe!
Place everything in a high-speed blender and blend until smooth. If you don't have a high-speed blender, you can soak the cashews in boiling water for an hour to soften them.
