You know how sometimes you don't plan anything, do something spontaneously and everything somehow goes right? I love when that happens. It just makes whatever it is that much special for me. I guess I always like to believe in some sort of divine path that we're meant to follow and when things fall right into place, it just feels like I'm on the right track.
It's great when this happens on a greater scale in life, but I've also learned to appreciate little things such as something as simple as creating a recipe and nailing it on the first try. This Vegan Sugar-free Caramel Pudding is one of those things. I basically threw things in the blender, and it just came out perfect! One of the simplest but most delicious recipes that I came up with.
It tasted great fresh off the blender, heated by the friction, and I couldn't resist but eat all of it. But if you have the patience to let it sit in the fridge for an hour or so, I'm sure it would be even better.
I layered it with some chopped bananas and it was a great flavour combination, but you could totally change it up and add whatever toppings you like: berries, nuts or chocolate...
