Chia Fresca, two ways (vegan, sugar-free)

Vegan Chia Fresca (vegan energy drink)

Even though they saw a surge in popularity a in recent years, Chia seeds are definitely not new. They were first used by the Aztecs as early as 3500BC - it was actually one of their four main crops. Interestingly, it was so valuable to them that they sometimes paid their taxes in Chia seeds. (Wish I could do that now 😅) Moreover, Aztec warriors were said to travel long distances with only chia seeds in hand, because they believed the sustenance and strength they received from them would be enough. In fact, “Chia” means “strength” in the Mayan language. 

These ancient civilisations were way ahead of us and had a point. Chia seeds are little nutritional powerhouses, containing large amounts of fibre, omega 3 fatty acids and protein. They’re also rich in antioxidants which are known to help keep you full longer as they can absorb up to 10-12 times their weight in water.

To add my own twist to this traditional drink made with chia seeds, I used coconut water in place of water for some added electrolytes and some natural sweetness. I also came up with two flavour combinations and used superfood powders to add some colour, which are completely optional. The two flavours are:

Turkish Delight Chia Fresca

This Turkish Delight inspired Chia Fresca has some rosewater added for not only flavour but some added nutritional value. Rosewater is rich in antioxidants, may help prevent infections and may soothe skin irritation. (Source) I added some dragonfruit powder for a touch of colour and the lemon juice balances out the sweetness and gives it a nice tang.

Blueberry Chia Fresca

Flavoured with vanilla and some blueberries added in for good measure, this drink basically tastes like a blueberry cheesecake! I added some blue powder (A mix of Butterfly Pea, Blueberry and Blue Spirulina powders that I bought at ALDI. If you're in Melbourne, they were on special last time I checked!) for that rich purple colour.

Chia Fresca makes for a great energy drink to have before or after gym because chia seeds help keep you full, coconut water will help replenish your electrolyte levels and the natural sugars will give you energy. As an added bonus, your weird looking drink will surely get you some stares and curious gym-goers coming up to ask you what it is you're drinking. So if you're single, maybe this is how you're gonna meet your future partner. 😂

 1 cup + 2 tbsp Coconut Water
 1 tbsp Lemon Juice
 ½ tbsp Chia Seeds

 2 tbsp Blueberriesfresh or frozen

In a glass, add in the lemon juice and extracts and if using, the dragonfruit powder. Form it into a paste, then slowly mix in the remaining water. (This helps mix the powder in smoothly)

Add in the chia seeds and mix with a spoon. Set aside for 10-15 minutes for the chia seeds to soak up some water, making sure to stir it often.

Enjoy with a wedge of lime or lemon.
